Preheat oven to 350 degrees F. Prepare two metal loaf pans using shortening, flour, and plastic wrap (the usual cake maneuver).

Mix the sugar and oil together. Add eggs, milk, and vanilla extract.

Separately, mix together flour, salt, baking soda, and cinnamon.

Mix dry into wet. Then stir in the grated zucchini (making sure to squeeze it so it's as dry as possible!) and any add-ins desired. Do not overmix! If using frozen, already squeezed zucchini, do not squeeze more. Dump out any excess liquid that came out of the veg but do not squeeze otherwise.

Bake for 60-75 minutes, using the toothpick test to check for doneness. Check at the 45 minute mark. Let cool slightly then remove to a wire rack to cool completely.
